Description
This Oshizushi, “Tomoshibi”, is elegantly presented on a rectangular block of pressed sushi rice. Atop the rice is a vibrant layer of thinly sliced orange salmon like flame, its rich orange hue contrasting beautifully with the white rice. The salmon is garnished with a variety of delicate toppings, including small clusters of Ikura, tiny black & red Masago, and a few edible flowers. Sprigs of microgreens add a touch of freshness, enhancing the dish’s visual appeal. Yet, do not forget tiny chopped lemon rinds that add excellent accent to the whole taste of this artistic Oshizushi.
The name “Tomoshibi (灯火)” means Lantern, Light, Flame so our chef developed this dish based on these images.
