This Oshizushi, “Sekitai”, is a visually stunning dish presenting the image of “moss on the stone” which can be found on the mountainside in Japan. Moss on the stone is translated into “石苔 (Sekitai)”. The base is a compact, rectangular block of pressed sushi rice, providing a firm and slightly sticky foundation. Atop the rice, alternating layers of seared eel and salmon create a rich, savory contrast—the eel’s glossy, caramelized surface complementing the lightly charred, tender salmon.
The seared edges of both add a smoky depth, enhancing their natural flavors with vibrant garnishes: small spoonfuls of orange ikura offer a briny pop, while delicate green Masago (capelin roe) adds a subtle crunch and a hint of oceanic brightness. Microgreens, dills, intertwine with the toppings, bringing a fresh, herbaceous note with delicate edible flowers.
